Congratulations to all the Hawthorn Graduates

A certificate or degree from Hawthorn University credits our graduates with the highest professional standard.

Here are a few recent graduates from the Master of Science in Health and Nutrition Education program:

Lauri Rosenthal graduated with honors. Lauri received a Bachelor of Science degree from Lehigh University and spent time in the work force prior to raising her children. During that time she volunteered as a member of the Board of Directors and Outreach Coordinator for the Juvenile Diabetes Research Foundation. Lauri interests in health and nutrition topics include juvenile diabetes, gluten allergies, and colitis. She is an active member of several nutrition associations and will be opening a nutrition counseling and coaching practice at Spa Amadora in Skillman, NJ.  Lauri is passionate about sharing her knowledge and helping her clients maintain optimal health by considering each individual's uniqueness.
Thesis: Type 1 Diabetes - Celiac Disease Connection: How to Live a Healthy Life with Two Autoimmune Diseases.

Beth Teaford graduated with a Magna cum Laude distinction. In addition to her Hawthorn degree, Beth has a BS in Family Resources from West Virginia University and an MS in Education from Wilkes University. She presently is the Family and Consumer Science teacher at a local high school where she plans to emphasis cooking and eating whole foods in her Foods and Child Development courses. Beth believes that the foundation for an exceptional quality of life rests on consuming a diet that is nourishing and supportive of good health. She is convinced that student school performance is significantly enhanced when students are properly nourished and this drives her to present her students with nutrition and food preparation instruction that emphasizes whole, locally-raised foods.
Thesis: The Need for and the Adoption of a Whole Foods Philosophy into the Family and Consumer Science Curriculum!

Susan Prince graduated with a Magna cum Laude distinction. Susan has been involved in the health and wellness industry for over 20 years, is a Metagenics Certified First Line Therapy Lifestyle Educator, and a Certified Massage Therapist specializing in Myofascial Release Therapy.  Susan draws on her extensive educational and life experiences to empower her clients to make positive changes through one-on-one consulting and group therapeutic lifestyle programs.
Thesis: Aging without Getting Old, a 12-week educational series for individuals who either suffer from chronic disease and trying to restore health and those who want to learn how to prevent chronic diseases.

Lori Kruczek graduated Summa cum Laude. Lori holds a Bachelor of Science degree in psychology from Old Dominion University in Norfolk, VA and spent 32 years in the fields of high technology manufacturing and quality assurance helping people achieve their personal and professional goals.  Lori also completed a health coach program and is the owner of Better Health Coaching. 

Thesis:  Am I Getting Enough Fiber?  A Case Study in Fiber Deficiency and Associated Health Conditions.

Gretchen Kurtenacker graduated with a Summa cum Laude distinction.  Gretchen is a Medical Laboratory Scientist and Nutritional Therapy Practitioner in Seattle Washington. She spent much of her life studying nutrition on a personal level and after 28 years in clinical laboratories, decided to pursue nutrition on a professional level. Gretchen holds a Bachelor of Science degree from the University of Cincinnati in Clinical Laboratory Science. Her interests include food anthropology, food and the environment, and elder nourishment.
Thesis: Education in Midlife of a Nutritional Intervention for Alzheimer's Disease: Can It Be Motivating Despite the Lack of Imminent Threat? 

Here are a few recent graduates from Master of Science in Holistic Nutrition program:


Jill Borba graduated with the distinction of Magna cum Laude.  Jill also holds a BA in Arts/Psychology from San Diego University.  Jill has always been a believer in holistic health and the idea of treating the cause and not the system.  Upon enrollment, Jill told us that she would like to work in some type of holistic clinic that offers different forms of therapies or to work with an organization within a community to promote awareness of the importance of whole, organic foods like B-Healthy.  Her long range goal included opening a private practice.
Thesis: The Role of Nutrition in Drug and Alcohol Detoxification and Rehabilitation.

Danielle Hart graduated with the distinction of Summa cum Laude. Her thesis, Uncovering the Complex Equation of Change and Weight Loss, is an analysis of the nutritional, lifestyle, behavioral, psychological, and physiological factors involved in weight reduction and management. As part of the project, Danielle developed a questionnaire-based assessment to analyze these factors with the goal of efficiently developing healthy weight programs specific to each individual's needs. Danielle believes the addition of researching how people change greatly informs her holistic approach. She has now established Changelation, a health and wellness organization dedicated to inspiring, facilitating, and supporting change and healthy weight management for urban, tech professionals. Danielle brings to Changelation many years of professional expertise in adult learning, digital media development, and project management.
Thesis: Uncovering the Complex Equation of Change and Weight Loss.



Mary Wilbraham graduated with the distinction of Summa cum Laude.  Previously, Mary has earned a Bachelor of Arts degree in languages and a Post Graduate Diploma in Education from Monash University.  Mary also holds a Certificate IV in Workplace Training and Assessment from Melbourne University. Mary's thesis was inspired by her own successful battle with Adrenal Fatigue Syndrome. 
Thesis: Adrenal Fatigue Syndrome: An Under-Recognized Pandemic.





Here are a few recent graduates from Nutrition Consultant Certificate program:

Jason Westen graduated with honors. Jason was raised in a naturopathic holistic family that kept up with the latest nutrition information and practiced natural and healthy eating as well as alternative healing and herbal medicine. His background and personal experiences led him to pursue his passion for holistic nutrition and wellness. His goals include offering nutritional information and protocols to help his clients achieve better health and support the healing process.

India Penney graduated with a Summa cum Laude distinction.  India is a Bach Remedy Practitioner and has been studying and practicing for several years both in California and ConnecticutIndia plans to open her own business "Inside Out, Health & Nutrition" which focuses on nutrition education and support for clients interested in achieving a greater level of health as well as those who have been diagnosed by a doctor with problems ranging from autoimmune disease to panic disorders. India is also working on a cookbook for the kitchen-challenged. 




Barbara Michelson-Harder graduated with a Magna cum Laude distinction. After spending over 20 years in the hotel industry and almost a decade as an office manager for a chiropractor, she expanded her goals to include educating people to understand that what they eat is important to their health and to teach others how to improve their diets, lifestyles, and ultimately their wellbeing.  Barbara is particularly interested in working with people in the "over 50" range as our fast-paced society often places specific challenges on this group.  Her basic philosophy includes biochemical individuality - what works for one person might not work for another. She supports eating foods that are organic and as whole and unrefined as possible.
