Hawthorn University extends a warm welcome to new faculty member Dr. Koutoubi who earned his PhD in Dietetics and Nutrition from Florida International University in 2001. He has an MD degree from Iuliu Hațieganu University of Romania.
Dr. Koutoubi has a broad understanding of basic and advanced nutritional biochemistry, and food habits and practices among different ethnic groups. Dr. Koutoubi taught Advanced Nutrition: Macronutrients & Micronutrients and Research Methods in Nutrition and Health for graduate and undergraduate students. He also mentored research Nutrition students and served as the chair and member of student’s thesis committee.
Dr. Koutoubi's research focuses on coronary heart disease among tri-ethnic groups including African Americans, Caucasians and Hispanics. His interest is in cardiovascular disease and nutrition, homocysteine metabolism, prevention and wellness, lipoprotein metabolism, and cultural food and health. He has also authored a number of articles in peer-reviewed journals and wrote a book review. He served as the Editor-in-Chief for The Internet Journal of Alternative Medicine and reviewed manuscripts for The Journal of Alternative and Complementary Medicine, Ethnicity and Disease Journal, European Journal of Clinical Nutrition, and The Journal of The National Medical Association. Dr. Koutoubi has also been quoted in national magazines and newspapers including, Natural Health Magazine, Energy Time, Well Being Journal, Northwest Prime Time, and Natural Food Merchandiser.
Dr. Koutoubi does everything he can to facilitate learning by being clear and organized, by using varying teaching methods, and by being available for questions and by providing resources for students' learning and feedback on their performance. He believes communication is essential to the learning process and that taking responsibility for learning is crucial. Dr. Koutoubi also likes to help his students develop and apply critical thinking skills that will help them throughout their careers. He enjoys one-on-one interaction with students and small class size. This gives him the opportunity to help students understand and apply their knowledge in practice, clinic and life. For Dr. Koutoubi, teaching is fun, challenging and satisfying, especially when he sees results.
