Why the “peak eating experience?” As Nishaga explores in her dissertation, worry, anxiety and ambivalence instead of joy characterize American feelings about food.  Yet some research suggests that our enjoyment of food influences the food’s nutritional impact.  She raises important questions:  Is it possible that the prevailing health versus pleasure dichotomy contributes to not only disordered eating but also stress, disease and obesity?  Should we be teaching people to make peace with, or even maximize, gustatory pleasure to promote both health and happiness?
