Trudy is the author of The Antianxiety Food Solution: How the Foods You Eat Can Help You Calm Your Anxious Mind, Improve Your Mood & End Cravings (June 2011).  The publisher, New Harbinger, approached her to write a book after hearing her speak at the 2008 NANP Annual conference.   Being an author and speaking have allowed her to share her message with many more people and have contributed directly to the growth of her nutrition business.

Vitamin A: A Tale of Transformation, Extremes and an Impostor

This presentation will cover various roles of vitamin A in its different forms, myths and factors about its deficiency and presumed excesses, and, even though the FDA deems it the same, how vitamin A differs from β-carotene.

Karen Lyke earned her MS in Human Nutrition from the University of Bridgeport  and qualified as a CCN - Board Certified Clinical Nutritionist - in 2001.  Having studied macrobiotics and taught both nascent acupuncturists and massage therapists, she combines her love for biochemistry with more poetic perspectives, and is an ardent fan of Weston A Price's work.  She completed her DSc with Hawthorn University in 2013, and has been faculty with Hawthorn since 2008.  She resides in NW Ohio with her husband, and a small ménage of chickens and sheep in a large organic vegetable garden.
